Preperation

Preheat the oven to 400F. Cut the eggplant into 2 pieces lengthwise. Try to make a series of parallel cuts. Don’t cut through the skin. Brush the eggplant (cut sides) with 1/2 table spoon of olive oil on each side. Put the eggplant’s cut side down on a roasting pan and brush the skin with ½ table spoon of olive oil and bake for about 15 minutes. Turn over after 15 minutes and cook it again 15 minutes more until the flesh soften. Take it from oven and reduce the heat to 350 F. In a small pan, heat the remaining olive oil on a medium heat. Add the ginger, the garlic, and the red pepper, and saute for two minutes. And then add the green onions and the cilantro and saute for another 2 to 3 minutes. Transfer it into a bowl. When the eggplant is cool, scoop out the pulp leaving the skin intact and chop the pulp. In the bowl which has the red bell pepper mixture; add the chopped eggplant, the shrimp, the beaten egg, the fish sauce and the 2 table spoon curry paste and stir it very well. Insert the mixture in the eggplant and put it back inside oven for about 30 minutes until the stuffing is hard. Garnish it with cilantro leaves and then you could serve. Good appetite.
